This version of pancake is on the chewier/stickier side due to tapioca and arrowroot flour, nevertheless it is a wonderful yummy option for friends on AIP diet who cannot have eggs, grains and lots more. And I know how pancake deprived it can get on AIP. So I experimented and came up with this Uttapam (Indian pancake) inspired eggless paleo salty pancake. Hope you enjoy it as much as I do! :)
Yield: 14 mini pancakes
Ingredients:
- 1/4 cup Coconut flour
- 1/2 cup Tapioca flour
- 2 Tbsp. Arrowroot starch
- 1/4 Tsp. salt (or as per taste)
- 1/2-1 Tsp. Shortening (Palm oil)
- 1/2 cup water
- 1/4 chopped onion
- Handful chopped green onion
- Handful chopped cilantro
- 1 Tsp. dried garlic powder or 1-2 cloves of chopped fresh garlic
- (You can mix and match the add-ons like cumin seeds/powder(non AIP), parsley, chives, green chilly (non AIP) and so on)
Directions:
1. In a bowl, mix in all the dry ingredients including salt
2. Mix in shortening
3. Add water, if batter is too thick add more water little by little. (the batter should be "flowy" but not too "runny")
5. Heat a non-stick pan in medium heat (should work on other pans too, but I find non-stick easier with pancakes)
6. Once uniformly hot, grease the pan lightly with shortening. Oil spray should work too.
7. Take a tablespoon of batter and place it on the oiled pan and press it lightly to spread it out. (If you want bigger sized pancake, put several tablespoons)
8. Cook for 2 minutes or until the edges brown. Flip and repeat. Cook for 1 minute more on each side.
Note: If you try to flip it too quickly, the batter being sticky will make it hard to flip. So wait until the edges brown.
9. Continue until you are done with all of the batter. Serve it with guacamole or your favorite sauce.
