AIP Paleo Pancakes (Eggless, Vegan, Gluten free)

This version of pancake is on the chewier/stickier side due to tapioca and arrowroot flour, nevertheless it is a wonderful yummy option for friends on AIP diet who cannot have eggs, grains and lots more. And I know how pancake deprived it can get on AIP. So I experimented and came up with this Uttapam (Indian pancake) inspired eggless paleo salty pancake. Hope you enjoy it as much as I do! :)
Yield: 14 mini pancakes

Ingredients:

  • 1/4 cup Coconut flour
  • 1/2 cup Tapioca flour
  • 2 Tbsp. Arrowroot starch
  • 1/4 Tsp. salt (or as per taste)
  • 1/2-1 Tsp. Shortening (Palm oil)
  • 1/2 cup water
  • 1/4 chopped onion
  • Handful chopped green onion
  • Handful chopped cilantro
  • 1 Tsp. dried garlic powder or 1-2 cloves of chopped fresh garlic
  • (You can mix and match the add-ons like cumin seeds/powder(non AIP), parsley, chives, green chilly (non AIP) and so on)

Directions:

1. In a bowl, mix in all the dry ingredients including salt
2. Mix in shortening
3. Add water, if batter is too thick add more water little by little. (the batter should be "flowy" but not too "runny")
4. Mix in chopped onion, green onion, cilantro and garlic
5. Heat a non-stick pan in medium heat (should work on other pans too, but I find non-stick easier with pancakes)
6. Once uniformly hot, grease the pan lightly with shortening. Oil spray should work too.
7. Take a tablespoon of batter and place it on the oiled pan and press it lightly to spread it out. (If you want bigger sized pancake, put several tablespoons)
8. Cook for 2 minutes or until the edges brown. Flip and repeat. Cook for 1 minute more on each side. 
 
Note: If you try to flip it too quickly, the batter being sticky will make it hard to flip. So wait until the edges brown.
9. Continue until you are done with all of the batter. Serve it with guacamole or your favorite sauce.

Nifty Fifty

Guess who's excited about a new lens, yesssss it's me, it's me *jumps with joy.  Funnily, my friend asks which contact lens are you getting so excited about?  LOL.

Welcome Nifty Fifty, the newest addition to my photography gear.  I have been wanting a prime lens for a while.  (Prime lens have a fixed focal length so zooming in/out equals walking near/far from the subject :)  Camera + workout gear ehh, can't beat that.

Generally, I do not know or care about gadgets and gear but I had heard a lot about the prime lens and how it boosts your creative side and makes you think and visualize the shot.

I could not wait to give it a try right away so I just walked around my home looking for something to take photos of.  I need to get used to the large aperture, lots of light and zero zoom.  Here are some shots from today:

Happy Valentine's Day!

I could not find a photo with hearts, cards or chocolates.  So, I chose this photo because I think it is super cute and full of love.   How many of you went awwwww?  A little story behind this photo.  I was nowhere near the family instead was far up and away in a building with my tele-zoom.  I saw the dad setting up camera on the stroller after writing in the sand.  Ofcourse, I have to be nosy so I kept zooming in then started to take photos.  It looks like we both almost pressed the shutter at the same time.  

The photo brings joy to me and I hope it has the same impact on you!  After all, isn't Valentine's day all about bringing happiness to each other?

Spread the love

Although I was at a destination spot, Destin, I was not feeling it.  Maybe because it was off season the place just was not appealing; it  seemed dead.  Sometimes I wonder if I am just so moody that no matter what if I don't feel it, I don't.  One of my excuses, I'm a creative person, so I can get away with being moody, okayyy! :)

So anyway, as we were strolling down the almost empty boardwalk, I stopped and took some photos of birds, boats, handy man fixing a house and some vibrant orangy red fishes interestingly or disgustingly hung for display. 

Then as we were leaving, we came across a humongous tree that had branches spread out wide as if it were reaching out with its arms wide open.  I sure could feel the love this time.

Out of everything else in Destin, weirdly, I was awestruck by this tree.  I just stood there mesmerized and was like, wow, look at that tree, it's amazing.  Ofcourse, I might've been tagged crazy.  Surely, not the first time.  Once again, I can get away with being crazy coz I am an artist lol.  So nevertheless, I ended of taking photos of the tree from different angles and this is one of my favorite.

View from my hotel of Gulf of Mexico.

This is my first time visiting north west Florida.  This photo of Gulf of Mexico was taken at Fort Walton.  As you know, I am fascinated by sunrises/sunsets.  So you can imagine my excitement when I saw the view from my hotel room.  I was hooked to taking photos and was no longer hungry or tired despite hours of drive.

Merry Christmas and Happy holidays

Christmas in St. Augustine
St. Augustine, the oldest city in the U.S. intrigues me and takes me back to history.  Although I have been there several times, I never get bored (ok except the Fort tour :).  I just love the mix of nature and old style houses.  I had not been there during Christmas time; it was all lit up and the ambience help me get in holiday mode.
